Althaea officinalis 'Erfurter'

Marshmallow is an indispensable herb in the kitchen garden. Being both edible and medicinal, its uses are manifold. We like to use the flowers and young leaves in salads. The roots we use for their gentle medicine. It contains a soothing (albeit slimy) mucilage that calms many bodily aggravations. 'Erfuter' is a German variety with a higher concentration of mucilage than the straight species.
