Angelica archangelica is a favorite at Green Canvas Farms. It is a verdant biennial that grows best in moist, rich soil in sun to part shade (shade is needed in hot summers).
Angelica has been used medicinally and as food for centuries. The entire plant is edible, but we love candying the hollow, aromatic stems. The flavor is strong and sweet. You might recognize the flavor, as it's used as a flavoring in chartreuse and vermouth. It's also commonly used alongside juniper in the making of gin.
